1. Jaggery Made from Sugarcane
It is made from the juice of sugarcane that has been boiled and filtered before being churned into a solid sugary substance. Its color ranges from light to a bit dark brown. If the color of the jaggery is dark, then it is the right one; if you find light color jaggery, then it is impure.
In terms of glycemic index, sugarcane jaggery has an 84.1 rating, making it a high-glycemic-index food that should not be consumed by diabetic patients.
2. Coconut Jaggery
The Unfermented coconut sap is used to make this product. This is not the same as regular sucrose and does not contain any artificial ingredients. In addition, this jaggery can be used to effectively reduce the spiciness of any gravy or sauce.
It is a good source of magnesium & iron, both of them are important for the human body. It comes in the darkest color of any of the types and has a hard texture. One method of determining its pureness is to put a small quantity of jaggery in warm water and dissolve it. It is also known as panai vellam or karuppatti. It is a traditional sweet dish from Kerala. A palm tree extract is used in the production of this product.
